I like walnuts although my husband does not. I had no idea about all the health benefits of walnuts! Because I do the food prep for both of us, going forward walnuts will be included; we’ll just hope they are an acquired taste!

There’s an interesting article I came across I want to share with you from the Harvard Gazette about the health benefits of walnuts. They are impressively healthy little nuts, and it’s worth taking the time to read this. The article says, in part:

A newly developed machine learning algorithm has uncovered information about how eating walnuts can lead to significantly lower risk of chronic diseases.

The algorithm was able to analyze data from 1,833 participants of a multi-year nutrition study and identify 19 biomarkers associated with walnut consumption, according to research led by Harvard T.H. Chan School of Public Health. The researchers were then able to determine that people who had metabolic profiles containing these biomarkers had a 17 percent lower risk of type 2 diabetes and a 29 percent lower risk of cardiovascular disease.

I picked up some shelled walnuts yesterday, and I’m going to dry toast them in a cast iron skillet. I do this with sliced almonds and pecans too. They’re delicious and because their dry toasted, you aren’t adding any extra fat to them. Just heat them on medium heat and stir frequently until they are roasted. They smell amazing, and I keep them on the counter in a glass container ready to add to oatmeal and salads! They’re delicious!

I like to pass along everything I find that’s good to add to your arsenal of healthy eating to help you stay young and vibrant, both mentally and physically, for years to come! It’s not always about nuts, but this time it’s definitely about the health benefits of walnuts!
