
Garlic Cauliflower Mashed Potatoes

Ingredients
- 1 head organic cauliflower, chopped
- 3 cloves fresh garlic, minced
- 1 tbsp chopped garlic
- Salt & pepper to taste
- 3 tbsps butter
- 1 tbsp olive oil
- ¼ c white wine (chardonnay)
- ¼ tsp nutmeg
Instructions
- Steam the cauliflower
- Once it is soft, mash it with a potato masher or in a food processor. I like the hand masher as it gives it a more rustic texture.
- Put the hot, mashed cauliflower in a pot on low heat and stir in the ingredients.
- Reheat slowly and serve hot.
- Leftovers can be made into pancakes and browned in a skillet.
