Easy healthy meals…it’s not that hard!
In an effort to support you in your quest for easy healthy meals, I have this to share…
This morning, it was cold out. I mean really, really cold; it was -13 F. For us, that’s cold.
I wanted to take my lunch with me to work, and I really wanted soup so I could have something hot. I didn’t have any soup left in the refrigerator, so I made some in 5 minutes!
I took leftovers and put them together. I had some bean and spinach mixture; some quinoa and brown rice pasta in the fridge; some brown rice mixture; some leftover cauliflower; and a little leftover canned wild salmon. I put everything together in a glass storage container, added vegetable broth, and voila! Soup!! If I hadn’t had the vegetable broth, I would have just added water and more spices like pepper, garlic powder, dried onion flakes and dried dill. Now there’s an easy healthy meal!
I confess that at my office, the only way to reheat is in a microwave which I do not use at home. In fact, at home, we pulled our microwave out last year and replaced it with a serious hood; we cook so much, it just made sense to have an outdoor vented range hood. Microwaving messes with the molecular structure of the food and is not good to do.
But, I digress. My point is that it is not hard to eat well, nor is it time consuming to do so. I’ll bet you anything the time it took me to dump everything in that glass storage bowl was a lot less than the time it would take you to get in your car and drive over to get a Happy Meal (which I like to call an Unhappy Meal…).
It was quick; it was cheap; I didn’t waste time or money with it, and I used up my leftovers. In fact, I had so much soup that tomorrow’s lunch will be a repeat. How easy is that?
