How are the chickens who produce your eggs treated?
I love eggs. Because I eat a largely vegetarian diet and have been doing so for nearly 30 years, I have always relied on eggs for a go-to source of protein.
Poached eggs are my favorite for breakfast. Did you know that when eating eggs, it’s actually healthier to cook them without breaking the eggs, such as scrambling them? This is because the yolks contain most of the egg’s cholesterol. Breaking and scrambling them can cause the cholesterol in the broken yoke to oxidize by exposure to air and to the heat of cooking, and this can potentially contribute to atherosclerosis.
I only buy “cage free” organic eggs, which I thought meant the chickens were well fed and well treated. This post by the wonderful people at Food Matters tells a very different story. I thought you’d be interested in seeing it too!
I’ll be finding my eggs locally from now on, and I’m thinking my sheep might enjoy the company of chickens in the near future.
