My last writing was about the fact that I suspected my sudden joint discomfort was a result of eating at least 2 eggs almost every day. Well…
I have good news and bad news…the good news is that I stopped eating eggs 6 days ago and my joints are feeling a lot better. The bad news is that I stopped eating eggs and my joints are feeling better.
Honestly, I am so bummed! I love eggs for breakfast. Plus, I had just perfected the poached egg thing. I really was making great poached eggs. No waste, just tender and custardy…hmmm.
For those of you who are still eating eggs and want to try my method…actually, it’s not my method…I saw it on YouTube, but it is amazing. Put your raw egg in a small bowl. In a skillet with about 1 1/2 inches of gently boiling water, take a whisk and whisk in circles. I always whisk counter-clockwise. Then gently pour the egg into the center of the gently swirling water. It magically folds around on itself; no waste! And the texture of the egg white is amazing!
But I digress. I’ve done some additional research into eating eggs, and there are studies indicating they may, in fact, contribute to joint pain in people with sensitivity to eggs. For others, there are studies showing the membrane around the white has been shown to provide some relief to RA sufferers. I find all of this very confusing, but we are all different and have to figure out what works for our own bodies.
As I mentioned in my last post, eggs are one of the seven foods JJ Virgin advises to eliminate from your diet. It doesn’t mean you have to eliminate all of them forever; it’s just the best way to clean the slate and then introduce foods that may be suspect back into your diet to see if you feel the same or worse once you are eating them again.
