I love broccoli; it’s good for you, so we eat it frequently. Always fresh, and always organic…
My tastes are simple. I come from a family that ate a very bland English-style diet. Meat, chicken or fish, a very well cooked (or often overcooked) vegetable and potato or rice. No sauces, no spices.
My husband Rob’s family ate a very Mediterranean diet. Lots of flavors, sauces and spices. Living and cooking with Rob has been a learning curve that continues to this day.
Tonight, when I reinvented leftover soup that started as vegetarian two nights ago, became a salmon stew last night and then morphed into a soup with anchovies and shrimp tonight (I make a large amount of whatever I’m cooking and then add to it to keep my work and cooking time down), my plan was to have a good amount of steamed broccoli as the vegetable. Good idea, wholesome meal. Easy…I like it!
Rob’s comment was “steamed, again?” Ok…I need to be pushed at the end of the day to crank up my creativity. Steamed would have been easy and fine for me, but honestly, I need to stretch myself for you to come up with easy tasty dishes that you can do quickly and easily that are healthy and taste amazing so… Here’s one for you:
Organic Broccoli Sauteed with Garlic and Olive Oil and a bunch of other stuff…
Broccoli – washed and cut into florets (I divide the large florets into smaller pieces)
Steam the broccoli for 3 minutes. Remove from heat and rinse with cold water to stop the cooking process
In a skillet (I use cast iron), heat olive oil on medium heat and add sea salt, garlic powder and dried onion flakes
While those ingredients are browning, pull them to the side and add more olive oil. When it is hot, add minced fresh garlic and stir until it begins to brown. Mix everything together and add the par-steamed broccoli. Stir it to heat it up in the skillet and then drizzle with toasted sesame oil.
It only takes a few minutes, but the taste is rich and incredible!
You can always make a big lot of it and toss it in a skillet to reheat for another meal.
I go for easy, quick and healthy every time!
