1 1/2 cup dark chocolate (chips or chopped chocolate) I like to use Trader Joe’s 72% chocolate bar for this…it keeps the sugar content lower than using 60% chocolate chips. Just chop the bar up into bits.
Preheat oven to 350F
Put shredded coconut in a small bowl; add coconut milk and stir to blend. Allow to sit for 10-15 minutes.
In a large bowl, mash bananas (a hand mixer is great for this)
Add almond butter, cocoa powder, vanilla, baking soda, cinnamon, coconut mixture and salt. Blend again using the hand mixer.
Add almond flour and mix everything until well blended
Fold chocolate chips/chunks into batter
Spoon batter onto a parchment paper-lined baking sheet
