It’s simple, and I wanted to be sure it wasn’t a fluke one-time thing before I shared it with you. I’ve now done it a few times and am ready to pass on the info and recipe!
Here are your ingredients and your instructions:
- Previously frozen wild caught cod
- White wine – I typically use a chardonnay
- Salt – I like pink Himalayan salt
- Garlic powder
Put the cod on a plate. and pierce it throughout with a fork.
Pour white wine over the fish and then salt and shake garlic powder over it.
Let it marinate for 10-15 minutes. Turn the fish over and let it sit for another 10-15 minutes.
I brown the fish top down in avocado oil in a cast iron skillet (my favorite way to cook) for about 3 minutes. Then I turn it, put sautéed mushrooms and onions I’ve done earlier back in the skillet with the fish (this is optional), add a little vegetable broth and some onion flakes and organic white pepper.
Cover and let it poach until the fish flakes when you test it with a fork.
Serve with a generously sized salad or add spinach and cooked pasta to the fish and you have a reasonably priced healthy meal! I make a large portion so there are leftovers for the next evening and dinner is even easier and faster!
Because part of your healthy eating is reduction in portion size, you can easily have 4 servings of fish with a one pound fillet. At $4.99/pound, that’s $1.25/per serving for delicious protein!
